Salmon n' Bannock Bistro, founded in 2010 by Inez Cook of the Nuxalk Nation, is Vancouver’s only Indigenous restaurant. After a 30-year career with Air Canada and global travel, Inez saw a lack of Indigenous culinary representation in Vancouver and opened the bistro during the Vancouver 2010 Winter Olympics. The restaurant blends traditional Indigenous foods with modern flavours and has expanded into catering and retail, now offering signature bannock mixes in classic and gluten-free options.
