Salmon n' Bannock Bistro, founded in 2010 by Inez Cook of the Nuxalk Nation, is Vancouver’s only Indigenous restaurant. After a 30-year career with Air Canada and global travel, Inez saw a lack of Indigenous culinary representation in Vancouver and opened the bistro during the Vancouver 2010 Winter Olympics.
