
Maple Sugar (220g)
This maple sugar is carefully crafted from 100% pure maple syrup, making it a delicious alternative to white sugar.
Since time immemorial, the Indigenous Peoples of eastern Canada and the northeastern United States, including the Mi'kmaq, have harvested maple sap to make syrup. This sap, or sismo'qonapu, carries 46 essential nutrients for the life, growth, and protection of the tree from which it is drawn, and the Mi'kmaq were already well aware of its high energy and nutritional value.
Among the Gespe'gewa'gi Mi'kmaq, the idea of tasting the sap arose from observing squirrels nibbling on the branches of the sugar maple. A small piece of bone or concave wood was inserted into the bark under a V-shaped cut to allow the sismo'qonapu to flow into a bark basket placed at the base of the tree. For evaporation, large bark baskets filled with sismo'qonapu were placed inside holes in the ground, and hot stones were plunged into them to heat and thicken the liquid.
